1. The Elder Scrolls: Arena. The first game in the series is mediocre at best, but it spawned a franchise that dominates western RPGs to this day.
2. Double Dragon on the NES. I know the series is more or less dead now, but the second and third entries are legendary and spawned the entire beat 'em up genre.
3. Grand Theft Auto. The first game is a trivia question. The rest of the series is a must have.
4. Metal Gear. The first two games are trivia questions. The Metal Gear Solid spin-off series is huge to this day, though.
5. Arguably Zelda II: The Adventure of Link. I know the first two games were actually well-loved, but the series really took off with Link to The Past and that's the one that redefined everything that is now a series staple, like the Master Sword, the Triforce granting wishes, Ganon being a Gerudo wizard/thief who was turned into a boar creature by the evil within him, the two worlds concept, all that stuff.
6. Final Fantasy was a D&D rip-off. The sequels introduced a job system and multiple innovative concepts that made it into one of the most important game series there is. Yes, it was popular but nothing compared to the sequels from 3 onwards.

Also, the rating system clearly was ignored by my mom as we were playing it at the ages of between four and seven. My older brother and younger brother played it the most, with the worst squabble being my younger brother trying to destroy the console when my older brother repeatedly ripped his arms off (was that Jax's fatality? I think so). After a...physical altercation with our older brother, my younger brother learned to leave the console and controllers out of his rage-quitting 😅
He fared better as he got older, though, and we got Killer Instinct and even I preferred that game more. Jago's plethora of half-circle combos (that made me absolutely terrible with him on the right-hand side of the screen) and the resulting "Nintendo Thumb") are fond memories.
I love AC2 but AC1 is head and shoulders above it from my perspective.
Might and Magic led to the much more popular Heroes of Might and Magic series, with HOMM1 being ok, HOMM2 being great, and HOMM3 being all time classic.
Witcher 1 felt dated, with janky combat and some really questionable design choices (collectable cards from sexual encounters, really?). Witcher 2 improved the combat and story. Witcher 3 made it open world and improved almost everything.
