In a relationship, both sides must know when and where to compromise. Dude did his part, she didn't. An argument could be made if her attempt to convert him were due to a genuine concern about his health, but it clearly isn't. She's just bought into this lifestyle so much that she is outright deluding herself into having symptoms for not following it. And she's probably being encouraged by her group into getting deeper in the rabbit hole.

Behaviors such as this are similar to vigorexia. If it outright damages your relationships and happiness, it's no different from an addiction regardless of the health benefits.

It's not a clash of wills but outright a psychiatric issue. My advice is to seek medical help. If she doesn't want to, staying with her is akin to staying on a sinking ship.

So she's in a pseudocult and she's trying to convert you.. Run, it's gonna hurt, A LOT but there's enough fish in the sea that are a way better match. Never try to change your SO to your liking and vise versa. Only try to change them to be a better version of themselves. (And again not the way you view it)
