Anyone who says their least favorite instrument is anything but bagpipes is either lying to themselves, forgetting bagpipes exist as an instrument, or plays bagpipes.
I highly recommend Nive Nielsen&The Deer Children. She's an artist from Greenland wo makes some really good music using a baritone ukulele (very underrated instrument)
Without You by Eddie Vedder is a really good one. Also, Jame Shimabukuro is amazing? I wish there were more great ukulele players instead of them playing very simple songs so often. I personally play ukulele and I'd say I'm pretty good at it (not Jake Shimanukuro good, but above average), but I'm not great at song writing (but I'm working on it). Also, there's a channel called Hawaii Music Supply that has some good ukulele music. They have a store that sells good quality ukuleles.
Fast Forward by Canoe Club is a straight up ukulele banger. People who actually play the instrument can make it sound like flamenco guitar, it's just a shame that the vast amount of people who play it just lazily strum along to uninspired lyrics.
If you want something super different that uses the ukulele check out the song sorry entertainer by Daniel Johnston the ukulele doesn’t have to use in the cutesy soft way it can sound intense

Jake Shimabukuro has been called "the Jimi Hendrix" of ukelele, with good reason: Check out his version of "Bohemian Rhapsody." He's impressive.
