I make roux in 1-14 minutes the idea that you can break one is ridiculous. You can burn one but it can't be lumpy if done right.

Pretty close! Ild say break the curds up a little! And no cream in the gravy! The gravy should be very dark! (I’m from Quebec)

As a Canadian from Ontario and a Poutine connoisseur, I think this was slightly over complicated however very well executed! My instructions would be: make your crunchy favorite fries (not shoestring), thick beef or combination beef/chicken/peppercorn gravy (everyone has their favorite) and ABSOLUTELY use squeaky fresh cheese curds! Layering is a great thing to make sure your fries at the bottom don't end up with no cheese on the second half of your meal. This video was awesome!

FYI don't use flour in the sauce, corn starch does a way better job at thickening it and doesn't make it all grainy
