The books are brilliant.
The delicate balance between the emperor, spacing guild and the great houses made the universe somewhat functional and well, balanced. And Paul, the supposed hero, disrupts this balance with catastrophic consequences for billions of lives.

I think, that lack of ANY computers, I'm not thinking about AI itself, makes Herberts human empire quite... weak...
If they would face any alien race, like Tau, Volcans, Klingons, Necrons, Borg or even 40k's Empire of Man and SW Galactic Empire - those races on start would have issues with passing through shield technology, but for sure, using computers, would counter those shiled and kick Dunes Empire's arse.

I think the only thing that kind of breaks the universe for me is the fact that they couldn't develop navigation computers I mean that's not AI, but then I remember that the prohibition comes from religion so....

We're approaching a nexus in development more powerful AI in 21st Century. Algorithms are deciding right now what we're watching here. Now we buy and sale; companies use them screen applicants. ln next US elections could be used protect or prevent Voters rights.

I think the lack of computers stagnated technology for 10,000 years. If they ran into an interstellar star nations with computers like those in Star Wars, Star Trek, Battlestar Galactica, or Andromeda, the they might find a way to neutralize the Holtzman effect, including hunter seekers, with no real way for the Imperium to keep up by improving their own tech. The Imperium would be like China, Ottomans, or India when coming face to face with Europeans. They had been so advanced for a long time, but the Europeans caught up and surpassed because those societies had stagnated.

Technology is what distinguishes sci fi from every other genre, so I've always been somewhat dissatisfied with it's absence in Dune.

Further, you can't tell me that all "thinking machines" are absent... For example, are life support systems all analog and managed by a mentat controlling valves and other stuff? Or is there a microprocessor somewhere handling the load? What about sensors throughout the ship? What about tying together these various systems?

Integrated circuits must exist in the Dune Universe, even if no more advanced than what we have today. Naturally these devices must be networked. And voila, you've got a society filled with technology.

Considering the Maxwell-Boltzmann velocity distribution for air, the average velocity of an oxygen molecule is on the order of multiple hundreds of metre per second. While air molecules can go out unrestricted, only a very tiny fraction of outside air molecules can go inside because of the velocity limit imposed by the shield. This should result in a near vacuum-like low pressure environment inside the volume enclosed by the shield.
Basically everyone who use the personal shield without a pressurised suit ought to suffocate.

Holtzmann shield technology is basically a Maxwell demon.

Technology is not only hardware, nuts and bolts. It is also technique, and the Ancient Greeks called both these aspects with the word "techné", the technical, comprising both the production of mechanical works and of what we would call arts: music, poetry, persuasion etc. You mention the Guild Navigators. But there are also other influential schools of thought within the Empire: the mentats as general pupose AI replacements, the Bene Gesserit with their expertise in religious programming, eugenics and erotic manipulation, the Tleilaxu with genetic engineering and espionage, even the school of the swordmasters.

I think this is a very interesting way to pull back technology instead of predicting what can be. I can see the reasoning behind not wanting computers to be able to take over, especially with how AI is making the rounds now. But what's the limit? Calculators are bad, but is using a slide rule or abacus ok? GPS navigation is a no go because you can whip out your sextant and atlas. I suppose video and audio recordings are bad too since you can memorize what was said, unless it was on film and not digital?

I never watched it read the books so I don't know. But it's more interesting as a sort of medieval fantasy with spaceships, like Star Wars but without the tech and droids.
